Boston Rocks

Boston Rock Cookies!

Boston Rocks - Ala Jeff Extra walnut bits
Boston Rocks Cookies

My favorite! My mother’s recipe for Boston Rocks cookies. These take me back to my childhood and Christmas time!  That’s not the only time of year they were made but Christmas time was rife with baking cookies, making candies and popcorn balls.

About 30 Minutes total : 10 minutes to prepare and 15-17 Minutes in the oven + cooling.

I’ve seen posts about freezing the dough, I suppose you could… But, but, I want them NOW.

Calories.. who cares they are delicious. (lots probably)

Nutrition: Have no idea, but it’s loaded with sugar, salt and stuff like that, so what do you think?  Must be bad for me cuz they taste so good!

Butter (softened)Cup123
Vanilla Extract (Pure)Teaspoon169
EggsLarge323
All-purpose flourCup369
Baking powderTeaspoon246
Baking sodaTeaspoon½11-1/2
SaltTeaspoon123
Ground CinnamonTeaspoon123
RaisinsCup123
Walnut ChunksCup123

Stuff you’ll need:

  • A clear work area with room for a big mixing bowl, ingredients and a stack of baking trays.
  • Big Mixing Bowl
  • Cookie/Baking trays (Sheets)
  • Baking paper so they don’t stick or burn on the bottom
  • An electric mixer.. or your hands if you wash them… the dough gets pretty thick.
  • A soup spoon
  • Oven Mitt(s)
  • Metal Spatula

The how to:

  1. Preheat your oven to 350 degrees (Fahrenheit),
  2. Use a big mixing bowl, mix butter and brown sugar,
  3. Mix in the eggs and vanilla,
  4. Mix in the flour, salt, baking powder, baking soda, and cinnamon and make sure it’s thoroughly mixed,
  5. Mix in the walnuts and raisins so they are fairly spread throughout,
  6. I use a soup spoon to drop the batter onto a parchment lined baking sheet,
  7. Bake in a preheated oven on the center rack for 15-17 minutes,
    • While they are in get the next tray ready,
  8. Start checking the bottoms with the spatula, about 12 minutes in.
    • Watch for visual cues like edge color and surface texture for when they are done.
  9. Remove from the  oven with an oven mitt(s), it’s hot so be careful where you put it, the stove top is usually ok.
    • Put the next tray in and repeat steps 6-9 as many times as needed…
    • Use the metal spatula to move them to a wire rack to cool. They don’t take long to cool,
  10. Stack in a cookie jar/tin separated with wax paper (or they will become one big one),
  11. Consume (eat, gobble, scarf) Time for another batch… or three.
